I put this breakfast together on the off chance that it would be tasty; I never expected it to be as good as it was! If you’ve seen my last post you’ll know I spent an afternoon picking strawberries and raspberries, so what better way than to throw them on top of a stack of pancakes. Now I’ll be honest, I completely made up the recipe for the pancakes, just adding bits as I went, so if you do try this recipe, be wary of the fact you may need to add more or less of some ingredients to get the right consistency.
200g self raising flour
2tsp baking powder
I put all of the ingredients into a big bowl and whisked them all together. The batter should be quite thick as you want them to be fluffy, rather than the crepe style.
I used butter to grease the pan (a lot of it), it also makes the edges crisp up nicely so I’d use that rather than oil. Or use coconut oil if you don’t want to use butter. I put two pancakes in the pan, and you know when they’re ready to flip because you get tiny bubbles on the surface.
Stack them up on a plate and put them under the grill whilst you make the rest and then you can keep them warm whilst you prepare the toppings. The best part in my opinion!
I sliced the stawberries and raspberries that we had picked the day before and put them in a bowl. In another bowl I sliced mango and bananas. Literally, all of my favourite fruits! I also had two little pots of Alpro go on passion fruit yogurt so I put them together in a bowl too! This is THE BEST yogurt I have ever tasted! I love Alpro products anyway, they’re such an amazing alternative to the usual animal dairy products. The go on range is also great! It’s so thick and creamy and tastes amazing – especially the passion fruit one! I also put honey, pumpkin seeds and the meridian cashew nut butter on top.
This was by far the tastiest breakfast I’ve had in a while and it is perfect for a nice sunny Sunday morning. Pancakes are so versatile and it’s great that you can do absolutely anything with them. So, definitely give it a try and let me know how it goes!
